Rosie’s Salmon & Veggie Dinner



1 1/2 Fresh Raw Salmon

1  Large Zucchini (sliced)

1 pint Small Fresh Diced Tomatoes (less or more on your liking)

1  Medium  Onion (diced)

1 tsp. Oil

1 tsp. Oregano

1  tsp. Lemon Juice 

1 Garlic Clove (diced)

1 tsp. Salt

1 tsp. Pepper


  1. Clean salmon and place in 9 x 12 baking dish
  2. Coat salmon with light oil
  3. Put diced vegetables over salmon and around salmon
  4. Add seasonings and lemon
  5. Place in oven 350 for 45 minutes uncovered

*don’t put too much lemon otherwise will be too much
