Rosie Crafts Crockpot Bacon Meatloaf with Vegetables

Ingredients:

1 1b. Chopped Meat

1 Large Egg

4 Fresh Low Salt Bacon Strips (cooked, chopped and diced)

1 Onion (cooked, sliced and diced)

1 Cup Breaded Italian Breadcrumbs

4 Potatoes (sliced thin slices)

3 Celery Stalks (sliced and diced)

1 Small Bag Fresh Baby Carrots

1 tsp. Pepper

1 tbsp. Red Hot

Directions:

  1. Cut and chop all vegetables
  2. Cook bacon in pot, leave some bacon drippings leftover in pot.
  3. Next, remove bacon from pot and dry on paper towel to remove some drippings
  4. Cut and chop: onions and bacon in tiny pieces
  5. Saute onion in pot
  6. Remove onion and let cool down
  7. Mix raw chopped meat, one egg, onion, bacon pieces, breadcrumbs, pepper and red hot
  8. Form the meatloaf in a oval round loaf in center of crock pot
  9. Add all vegetables around meatloaf
  10. Cook on low for 6 hours

Serves: 6
