Directions:

  1. Cook spinach until soft in pot
  2. After spinach is cooked, drain spinach in colander and get water out
  3. Bread flounder in one egg with Italian breadcrumbs
  4. Melt 2 tablespoons of butter in pan
  5. Add onion and saute
  6. Mix spinach and onion in bowl together
  7. Roll 1 1/2 tablespoons spinach mixture into each breaded flounder fillet and tuck
  8. Put fish fillet in baking dish after rolling them, make sure tight and stuffed fish are sandwiched next to each other.
  9. Melt 3 tablespoons of butter in a pot
  10. Add heavy whipping cream and 3 tablespoons of flour
  11. Keep stirring and mixing whipping cream and flour until bubbly
  12. Pour over the top of the stuffed flounder fillets
  13. Cover with foil and bake on 350 for 25 minutes

*Don't overcook the fish
