Ingredients:

2 cups Black Forest Cooked Ham (sliced and diced)

1 tsp. pepper

12 oz. Frozen Vegetable Mix (peas, carrots, corn mix)

1 Medium White Onion

1 pkg. 15 oz. Frozen Cheese Tortellini (cook according to package)

1 12 oz. can Diced Tomatoes with Seasoning

1 pkg. Mexican Shredded Cheese

Directions:

  1. Cut and dice ham and onion
  2. Saute in pot: ham, onion & diced tomatoes
  3. Grease 9 x 12 pan with oil
  4. Layer two large tortillas crossing each other
  5. Layer ham mixture: ham, onions & tomatoes
  6. Spread evenly cheese till covers ham mixture
  7. Layer two large tortillas crossing each other
  8. Layer ham mixture: ham, onions & tomatoes
  9. Then layer more cheese
  10. Layer two large tortillas crossing each other
  11. Top with shredded cheese
  12. Layer the layers to fill 9 x 12 dish
  13. Bake in oven covered with foil on 350 until cheese is melted (don’t burn)

*top layer can have tortillas or best is ending with top layer of cheese
